Make crispy sweet potato filling for tacos using your air fryer. This recipe delivers perfectly textured sweet potatoes ready for your favorite taco assembly.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 small corn or flour tortillas
  • For Topping (Optional): Shredded cabbage, lime wedges, cilantro, avocado slices, chipotle crema

Instructions

  1. Place the diced sweet potatoes in a medium bowl.
  2. Drizzle the sweet potatoes with olive oil. Toss to coat evenly.
  3. In a small bowl, mix the chili powder, cumin, smoked paprika, salt, and pepper. Sprinkle this spice mix over the sweet potatoes and toss again until all pieces are coated.
  4. Preheat your air fryer to 380°F (195°C) for 3 minutes.
  5. Place the seasoned sweet potatoes in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding. Overcrowding prevents crisping.
  6. Air fry for 12 to 15 minutes, shaking the basket vigorously halfway through the cooking time (around 7 minutes). Check for doneness; the potatoes should be tender inside and crispy brown on the edges.
  7. While the potatoes finish cooking, warm your tortillas according to package directions (you can warm them briefly in the microwave or directly over a gas flame).
  8. Assemble your tacos: Place a portion of the crispy sweet potatoes onto each warm tortilla.
  9. Top with your desired toppings, such as shredded cabbage, a drizzle of chipotle crema, and a squeeze of fresh lime juice. Serve immediately.

Notes

  • For extra crispiness, ensure the sweet potato cubes are completely dry before tossing them with oil and spices.
  • Do not skip shaking the basket halfway through; this promotes even cooking and crisping on all sides.
  • If you prefer a spicier filling, increase the chili powder or add a pinch of cayenne pepper to the spice mix.
