Ingredients
Scale
1 (14.75 ounce) can pink salmon, drained well and bones/skin removed
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon dried dill
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Cooking spray (oil based)
Instructions
In a medium bowl, flake the drained salmon using a fork. Remove any remaining bones or skin pieces.
Add the panko breadcrumbs, beaten egg, mayonnaise, Dijon mustard, lemon juice, dill, garlic powder, and pepper to the salmon. Mix gently until just combined. Do not overmix.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Lightly spray the air fryer basket with cooking spray. Place the patties in a single layer in the basket, ensuring they do not touch. You may need to cook in batches.
Spray the tops of the patties lightly with cooking spray.
Air fry at 380°F (195°C) for 10 to 12 minutes, flipping the patties halfway through the cooking time.
The patties are done when they are golden brown and heated through.
Serve immediately with your preferred sauce.
Notes
For extra crispiness, lightly brush the tops and bottoms of the patties with melted butter before air frying.
If you prefer a gluten-free option, substitute the panko breadcrumbs with an equal amount of gluten-free breadcrumbs or crushed gluten-free crackers.
These patties can be made ahead of time and refrigerated for up to 2 days before cooking.
