Ingredients
Scale
2 medium zucchinis
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Ranch dressing for serving
Instructions
Preheat your air fryer to 400°F (200°C).
Wash and trim the ends of the zucchinis. Cut them into 1/4-inch thick fry shapes.
Set up three shallow bowls. In the first, place the flour. In the second, whisk the eggs. In the third, combine panko breadcrumbs, salt, pepper, and garlic powder.
Dredge each zucchini fry first in flour, then dip in the egg mixture, and finally coat thoroughly with the panko mixture.
Arrange the coated zucchini fries in a single layer in the air fryer basket, ensuring they don’t touch. You may need to cook in batches.
Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with ranch dressing.
Notes
For extra crispiness, you can double-coat the zucchini fries.
Feel free to add other seasonings to the panko mixture, like paprika or onion powder.
Ensure the zucchini fries are dry before coating for best adhesion.
