Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup unsweetened apple cider
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • For the Frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup unsweetened apple cider
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate medium bowl, whisk together the apple cider, softened butter, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix on low speed until just combined.
  5. Add the sour cream and mix on low speed until the batter is smooth. Do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  8. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  10. Gradually add the powdered sugar, alternating with the apple cider, beating until smooth and fluffy.
  11. Stir in the vanilla extract and cinnamon.
  12. Once the cupcakes are completely cool, frost them generously.

Notes

  • For a stronger cider flavor, you can reduce the apple cider by 1 tablespoon and add 1 tablespoon of apple cider concentrate.
  • Ensure your butter and eggs are at room temperature for the best batter consistency.
  • You can sprinkle a little extra cinnamon on top of the frosting for added flavor and decoration.
