You get all the flavor of a classic apple fritter in a soft, sliceable loaf. This moist, buttery quick bread features swirls of tender apples and cinnamon sugar, topped with a sweet vanilla icing.

Ingredients

Scale
  • ½ cup (1 stick) butter, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • Pinch of salt
  • ½ cup milk
  • 2 medium apples, peeled and chopped (use a mix like Granny Smith and Honeycrisp)
  • 2 tablespoons granulated sugar (for apples)
  • ⅓ cup light brown sugar (for cinnamon swirl)
  • 2 teaspoons ground cinnamon (for cinnamon swirl)
  • ½ cup powdered sugar (for icing)
  • 1–3 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, mix the light brown sugar and ground cinnamon for the swirl. Set this aside.
  3. Toss the chopped apples with the 2 tablespoons of granulated sugar. Set the apples aside.
  4. In a large bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
  5. Beat in the eggs one at a time, then mix in the vanilla extract.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  7. Add the dry ingredients to the wet ingredients alternately with the milk, mixing only until the batter comes together. Do not overmix.
  8. Spread half of the batter evenly into your prepared loaf pan.
  9. Sprinkle half of the apples over the batter, followed by half of the cinnamon sugar mixture.
  10. Top with the remaining batter, then layer with the rest of the apples and cinnamon sugar.
  11. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool further.
  13. While the bread cools, prepare the icing: Whisk the powdered sugar with 1 tablespoon of milk until you reach a smooth, pourable consistency, adding more milk one teaspoon at a time if needed.
  14. Drizzle the vanilla glaze over the slightly warm or fully cooled loaf. Slice and enjoy your homemade apple snack cake.

Notes

  • Using a mix of tart and sweet apples gives you the best flavor balance in this apple fritter bread recipe.
  • Allow the loaf to cool before slicing to help the layers set properly.
  • This sweet apple breakfast loaf freezes well once completely cooled and unwrapped.
