Make this easy, hearty casserole for a satisfying weeknight dinner. It captures all the flavor of a bacon cheeseburger without the bun, fitting perfectly into a low-carb or keto diet plan.

Ingredients

Scale
  • 1.5 lb ground beef
  • 1 cup cooked, crumbled bacon
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.5 oz) can cream of mushroom soup (check for low-carb version if strictly keto)
  • 1/2 cup heavy cream
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons yellow mustard
  • 1/4 cup dill pickle relish (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Add the chopped onion to the skillet with the beef. Cook until the onion softens, about 5 minutes.
  4. Stir in the garlic powder, salt, and pepper.
  5. In a separate bowl, whisk together the cream of mushroom soup, heavy cream, beef broth, and mustard until smooth.
  6. Pour the cream mixture into the skillet with the beef and onions. Stir well to combine.
  7. Fold in the crumbled bacon and half of the shredded cheddar cheese (1/2 cup).
  8. Pour the entire mixture into the prepared baking dish.
  9. Top evenly with the remaining 1/2 cup cheddar cheese and the mozzarella cheese.
  10. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  11. Let the casserole rest for 5 minutes before serving. Top individual portions with pickle relish, if desired.

Notes

  • For a stricter keto version, substitute the cream of mushroom soup with a homemade low-carb cream sauce made from butter, cream cheese, and broth.
  • You can add 1/2 cup of chopped low-carb vegetables like mushrooms or green bell peppers when cooking the onion.
  • If you prefer a tangier flavor, use a mix of cheddar and Monterey Jack cheese.
