Ingredients
Scale
4 medium apples (like Honeycrisp or Fuji)
1/2 cup rolled oats
1/4 cup chopped walnuts or pecans
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, melted
2 tablespoons water
Instructions
Preheat your oven to 375°F (190°C).
Wash the apples. Cut off the top quarter of each apple and scoop out the core, creating a cavity.
In a small bowl, combine the rolled oats, chopped nuts, brown sugar, cinnamon, and nutmeg.
Stir in the melted butter until the dry ingredients are evenly coated.
Spoon the oat mixture into the cavities of the apples, packing it gently.
Place the filled apples in a baking dish. Add the water to the bottom of the baking dish.
Bake for 30-45 minutes, or until the apples are tender and the filling is golden brown. Basting the apples with the liquid in the pan halfway through can add extra moisture.
Let cool slightly before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce for an extra special touch.
Adjust the spices to your preference. A pinch of ground ginger can also be a nice addition.
If your apples are very firm, you may need to increase the baking time.
