Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 8 (8-inch) flour tortillas
  • 2 cups shredded Monterey Jack cheese or a Mexican blend
  • 1 cup chopped bell peppers (any color)
  • 1 cup chopped onion
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken breasts with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Place the seasoned chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no pink remains.
  4. Once cooked, remove the chicken from the oven and shred or dice it.
  5. Warm the tortillas slightly to make them pliable. You can do this in a dry skillet or in the microwave.
  6. Lay out four tortillas. On one half of each tortilla, layer about 1/4 cup of cheese, some shredded chicken, chopped bell peppers, and chopped onion.
  7. Fold the other half of the tortilla over the filling to create a half-moon shape.
  8. Place the folded quesadillas on a baking sheet.
  9. Bake for 10-12 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted.
  10. Flip the quesadillas halfway through baking for even crispiness.
  11. Serve immediately with your favorite optional toppings.

Notes

  • For extra crispy quesadillas, lightly brush the outside of each folded quesadilla with olive oil before baking.
  • Feel free to add other vegetables like corn, jalapeños, or mushrooms to your quesadilla filling.
  • Ensure the chicken is fully cooked before shredding or dicing.
