Ingredients

Scale
  • 2 large sweet potatoes
  • 1.5 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped red onion
  • 1/4 cup chopped bell pepper (any color)
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh cilantro or parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake the sweet potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, prepare the filling. In a medium bowl, combine the shredded chicken, BBQ sauce, chopped red onion, and chopped bell pepper. Mix well. Season with salt and pepper if needed.
  5. Once the sweet potatoes are tender, carefully remove them from the oven. Let them cool slightly until they are easy to handle.
  6. Cut a slit lengthwise down the center of each sweet potato. Gently push the ends towards the center to open them up.
  7. Stuff the sweet potatoes generously with the BBQ chicken mixture.
  8. If using, sprinkle shredded cheddar cheese over the top.
  9. Return the stuffed sweet potatoes to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro or parsley before serving.

Notes

  • You can use leftover shredded chicken or rotisserie chicken.
  • Adjust the amount of BBQ sauce to your preference.
  • Feel free to add other vegetables like corn or black beans to the filling.
