Make this hearty and comforting ham and white bean soup. It is a simple, one-pot meal perfect for a cold evening.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can navy beans, rinsed and drained
  • 1 cup diced cooked ham
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth. Add the rinsed beans, diced ham, thyme, and bay leaf.
  5. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20 minutes to allow flavors to combine.
  6. Remove and discard the bay leaf. Season with salt and pepper to your taste.
  7. Serve hot.

Notes

  • For a creamier texture, mash about one cup of the beans against the side of the pot before serving.
  • If you do not have leftover ham, use a smoked ham hock for deeper flavor during the simmering time, removing it before serving.
  • This soup freezes well for future meals.
