Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh or frozen blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine the flour, rolled oats, brown sugar, and salt.
  3. Pour in the melted butter and mix until the ingredients are well combined and resemble coarse crumbs.
  4. Press about two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan to form the crust.
  5. In another bowl, gently toss the blackberries with the granulated sugar, cornstarch, lemon juice, and cinnamon until the berries are evenly coated.
  6. Spread the blackberry mixture evenly over the crust.
  7. Crumble the remaining one-third of the crumb mixture over the top of the blackberries.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the blackberry filling is bubbly.
  9. Let the bars cool completely in the pan before lifting them out using the parchment paper overhang.
  10. Cut into bars and serve.

Notes

  • For frozen blackberries, do not thaw before using. You may need to increase the baking time slightly.
  • If you don’t have lemon juice, you can substitute with lime juice or a tablespoon of water.
  • Add a pinch of nutmeg to the topping for an extra layer of flavor.
