Ingredients
Scale
1 medium head green cabbage, thinly sliced
1 tablespoon neutral oil (like canola or vegetable)
1 tablespoon fresh ginger, minced
4 cloves garlic, minced
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1 teaspoon cornstarch
2 tablespoons water
Optional: 1/2 cup sliced carrots or bell peppers
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water until the cornstarch dissolves. Set aside.
Heat the oil in a large skillet or wok over medium-high heat until shimmering.
Add the minced ginger and garlic to the hot oil. Stir fry for about 30 seconds until fragrant, being careful not to burn the garlic.
Add the sliced cabbage (and any optional vegetables). Stir fry vigorously for 3 to 5 minutes. You want the cabbage to wilt slightly but remain crisp-tender.
Give the prepared sauce mixture a quick re-whisk, then pour it over the cabbage in the wok.
Stir constantly as the sauce thickens, which should take about 1 minute.
Remove from heat immediately once the sauce coats the cabbage evenly.
Serve hot over rice or noodles, if desired.
Notes
For crisp-tender cabbage, cook it quickly over high heat. Do not overcook or it will become soft.
You can add 4 ounces of cubed firm tofu or sliced chicken breast after cooking the aromatics for a protein addition. Cook the protein fully before adding the cabbage.
To make this dish gluten-free, substitute the soy sauce with tamari.
