Ingredients
Scale
2 tablespoons butter
1 medium onion, chopped
2 carrots, sliced
2 celery stalks, sliced
1/4 cup all-purpose flour
4 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon salt
2 cups cooked, shredded chicken (rotisserie works well)
1/2 cup heavy cream
1 (10.2 ounce) can refrigerated biscuit dough, cut into quarters
Instructions
Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
Gradually whisk in the chicken broth until the mixture is smooth. Stir in the thyme, pepper, and salt. Bring the mixture to a simmer, stirring occasionally until the broth thickens slightly.
Add the shredded chicken to the pot and stir to combine. Reduce the heat to low.
Stir in the heavy cream. Do not let the mixture boil once the cream is added.
Arrange the quartered biscuit pieces evenly over the top of the simmering chicken mixture. Do not stir them in.
Cover the pot tightly and cook on low for 12 to 15 minutes, or until the biscuits are puffed and cooked through. Check one biscuit to confirm it is done in the center.
Serve immediately. You deserve this hearty, simple feast.
Notes
For an extra rich flavor, use half-and-half instead of heavy cream.
If you want a slightly cheesier dish, sprinkle 1/2 cup of shredded cheddar cheese over the stew just before placing the biscuits on top.
This recipe is a fantastic way to use leftover cooked chicken for a quick dinner idea.
