Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts
6 slices bacon, cut into pieces
1 large onion, chopped
2 stalks celery, chopped
2 cups chicken broth
1 (14.5 oz) can diced tomatoes, undrained
1 (15 oz) can whole kernel corn, drained
1 (15 oz) can cream style corn, undrained
2 medium potatoes, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup heavy cream
2 tablespoons cornstarch
2 tablespoons cold water
Instructions
Place the chicken breasts in the bottom of your slow cooker.
Scatter the chopped bacon, onion, and celery over the chicken.
Pour the chicken broth over the ingredients. Add the diced tomatoes, whole kernel corn, cream style corn, diced potatoes, thyme, salt, and pepper.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through.
Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
In a small bowl, whisk together the heavy cream, cornstarch, and cold water until smooth.
Stir the cream mixture into the chowder. Cover and cook on high for an additional 15 minutes, or until the soup has thickened slightly.
Serve hot.
Notes
For a quicker preparation, use pre-cooked rotisserie chicken instead of raw chicken breasts. Add the shredded rotisserie chicken during the last hour of cooking.
If you prefer a thicker soup, increase the cornstarch slurry amount to 3 tablespoons of cornstarch mixed with 3 tablespoons of cold water.
