Make rich, smooth chocolate ganache using only two ingredients. This recipe provides instructions for adjusting the ratio to achieve the perfect consistency for frosting, filling, or glazing.

Ingredients

Scale
  • 1 cup heavy cream
  • 8 ounces good quality chocolate (chopped or chips)

Instructions

  1. Place the chopped chocolate or chips into a medium, heatproof bowl.
  2. Pour the heavy cream into a small saucepan. Heat the cream over medium heat until it just begins to simmer around the edges. Do not let it boil rapidly.
  3. Immediately remove the hot cream from the heat.
  4. Pour the hot cream over the chocolate in the bowl. Let it sit undisturbed for 5 minutes to allow the chocolate to melt completely.
  5. After 5 minutes, gently whisk the mixture starting from the center and working outward until the ganache is completely smooth, glossy, and uniform.
  6. For a glaze or thin drizzle, use immediately. For frosting or filling, let it cool at room temperature until it reaches your desired thickness.

Notes

  • For a thicker ganache suitable for frosting or truffles, use a 1:1 ratio (equal weight of chocolate to cream).
  • For a thinner glaze or drip, increase the cream slightly, perhaps using 1.25 cups of cream to 8 ounces of chocolate.
  • If using dark chocolate, you may need slightly more cream for a smooth texture compared to milk chocolate.
  • If the ganache separates, add one teaspoon of room temperature water or milk and whisk vigorously until it comes back together.
