Ingredients
Scale
1 cup low-fat cottage cheese
1 cup cooked, shredded chicken breast
1/2 cup buffalo wing sauce (medium heat)
1/4 cup plain Greek yogurt or light sour cream
1/4 cup shredded cheddar or Monterey Jack cheese
1 teaspoon ranch seasoning mix
Optional: 1 tablespoon butter (for richer flavor)
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a small baking dish (about 6×8 inches).
Place the cottage cheese, buffalo sauce, Greek yogurt (or sour cream), ranch seasoning, and optional butter into a food processor or high-powered blender.
Blend until the mixture is completely smooth and creamy. This step is important for texture.
In a medium bowl, combine the blended cheese mixture with the shredded chicken. Mix well.
Stir in half of the shredded cheddar or Monterey Jack cheese.
Transfer the mixture to the prepared baking dish and top with the remaining shredded cheese.
Bake for 15 to 20 minutes, or until the dip is hot throughout and the cheese on top is melted and lightly bubbly.
Serve immediately with celery sticks, carrot sticks, or baked tortilla chips.
Notes
For the smoothest texture, use full-fat cottage cheese if you are not strictly counting fat, as it blends easier.
If you do not have a blender, you can mash the cottage cheese thoroughly with a fork before mixing with other ingredients.
This dip is Keto-friendly if served with low-carb dippers like celery or bell pepper strips.
