Ingredients
Scale
1 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon orange zest
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup dried sweetened cranberries
1 cup white chocolate chips
1/2 cup finely chopped pecans or walnuts (optional)
For the Frosting: 8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar, sifted
1 teaspoon vanilla extract
1/4 teaspoon orange zest
1/4 cup white chocolate chips, melted (for drizzling)
Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange zest.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the dried cranberries, white chocolate chips, and nuts (if using).
Spread the batter evenly into the prepared baking pan.
Bake for 25 to 30 minutes, or until the edges are lightly golden and a toothpick inserted near the center comes out with moist crumbs attached.
Let the bars cool completely in the pan on a wire rack.
Prepare the frosting: Beat the softened cream cheese and butter together until smooth. Gradually add the sifted powdered sugar, mixing until creamy. Stir in the vanilla extract and orange zest.
Once the bars are completely cool, spread the frosting evenly over the top.
Melt the 1/4 cup of white chocolate chips. Drizzle the melted chocolate over the frosting in a back-and-forth motion.
Immediately sprinkle the chopped dried cranberries over the wet chocolate drizzle.
Chill the bars for at least 1 hour before lifting them out of the pan using the parchment paper overhang. Cut into squares.
Notes
For a softer blondie texture, slightly underbake by about 2 minutes.
Use high-quality white chocolate for the best flavor in the drizzle and chips.
If you prefer a stronger orange flavor, add a tiny bit more zest to the batter.
