Simple, three-ingredient baked brie bites using puff pastry and cranberry sauce, perfect for holiday gatherings.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into small cubes
  • 1/4 cup whole berry cranberry sauce
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet.
  3. Use a 2-inch round cookie cutter to cut circles from the pastry. You should get about 12 to 16 circles.
  4. Place half of the pastry circles onto the prepared baking sheet.
  5. Place one small cube of brie cheese onto the center of each pastry circle on the sheet.
  6. Top the brie with about 1/2 teaspoon of cranberry sauce.
  7. Brush the edges of the pastry circles lightly with the beaten egg wash.
  8. Place a second pastry circle on top of each filled circle. Gently press the edges together with your fingers to seal them completely. Crimp the edges with a fork for extra security.
  9. Brush the tops of the sealed bites lightly with the remaining egg wash.
  10. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  11. Remove from the oven and let cool on the baking sheet for 5 minutes before serving warm.

Notes

  • If you want a slightly savory crunch, press chopped pecans onto the cranberry topping before sealing the bites.
  • You can prepare these bites up to 24 hours in advance; store them covered in the refrigerator and add 3-5 minutes to the baking time if baking directly from cold.
  • If you do not have a round cutter, you can cut the pastry into 2-inch squares instead.
