Make this easy, hearty white chicken chili in your slow cooker. Cream cheese provides a rich, creamy texture perfect for a comforting meal.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1 medium yellow onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 ounces cream cheese, cut into cubes
  • Salt and black pepper to taste

Instructions

  1. Place the chicken breasts, both cans of beans, green chilies, diced tomatoes with green chilies, onion, chicken broth, cumin, oregano, garlic powder, and cayenne pepper (if using) into the basin of your slow cooker.
  2. Stir the ingredients gently to combine.
  3. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  4. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
  5. Add the cubed cream cheese to the chili. Stir until the cream cheese is completely melted and the chili is smooth and creamy.
  6. Season with salt and pepper to your preference.
  7. Serve hot.

Notes

  • For a thicker chili, remove about 1 cup of the liquid before adding the cream cheese, mix in 1 tablespoon of cornstarch, and then return the mixture to the slow cooker before stirring in the cream cheese.
  • Garnish options include fresh cilantro, shredded Monterey Jack cheese, or a dollop of sour cream.
  • This chili freezes well for future meals. Cool completely before transferring to freezer-safe containers.
