Make a rich and satisfying creamy ground beef pasta quickly using just one pan for easy cleanup. This recipe uses simple ingredients for a fast weeknight meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 8 ounces pasta (shells or rotini work well)
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their liquid) and the beef broth. Bring the mixture to a boil.
  4. Add the dry pasta and Italian seasoning to the skillet. Stir well to combine.
  5. Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Remove the skillet from the heat. Stir in the cubed cream cheese until it melts and creates a smooth, creamy sauce.
  7. Stir in the grated Parmesan cheese. Season with salt and pepper to your taste.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a richer flavor, substitute half of the beef broth with heavy cream during the last 5 minutes of simmering.
  • If the sauce seems too thick after adding the cheese, add a splash of milk or reserved pasta water until you reach your desired consistency.
  • You can add 1 cup of frozen peas or spinach during the last 5 minutes of cooking for added vegetables.
