Make dinner simple and satisfying with this creamy crock pot chicken and stuffing. This set it and forget it recipe delivers tender chicken and flavorful stuffing with minimal effort, perfect for any busy weeknight.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup water or chicken broth
  • 1 (6 ounce) box dry stovetop stuffing mix (do not prepare)
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Place the chicken pieces in a single layer on the bottom of your slow cooker insert.
  2. In a separate bowl, whisk together the cream of chicken soup, cream of celery soup, and water or broth until smooth.
  3. Pour the soup mixture evenly over the chicken in the slow cooker.
  4. Sprinkle the dry stuffing mix evenly over the top of the soup mixture. Do not stir the stuffing into the liquid; this layering technique keeps it from getting soggy.
  5. Cover the slow cooker and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  6. If using cheese, sprinkle it over the stuffing layer during the last 15 minutes of cooking time.
  7. Remove the chicken, shred it if desired, and mix it gently with the stuffing and sauce before serving.

Notes

  • For juicier chicken, use chicken thighs instead of breasts.
  • If you want a slightly crispier top layer, you can carefully transfer the stuffing layer to an oven-safe dish after cooking and broil it for 2-3 minutes, but this adds a step.
  • This recipe works well as a complete meal, but you can add a can of drained green beans or frozen mixed vegetables around the edges during the last hour of cooking.
