Ingredients

Scale
  • 3 lbs boneless, skinless chicken breasts or thighs
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth or water
  • Tortillas and your favorite toppings for serving

Instructions

  1. Place the sliced chicken breasts or thighs into the basin of your slow cooker.
  2. Add the sliced bell peppers and onion over the chicken. Sprinkle the minced garlic over the vegetables.
  3. In a small bowl, whisk together the chili powder, cumin, paprika, onion powder, garlic powder, oregano, cayenne pepper (if using), salt, and black pepper. This is your homemade fajita seasoning.
  4. Sprinkle the seasoning mixture evenly over the chicken and vegetables in the slow cooker. Drizzle the olive oil over everything.
  5. Pour the chicken broth or water around the edges of the slow cooker contents.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is very tender.
  7. Remove the chicken from the slow cooker and place it on a cutting board. Use two forks to shred the chicken easily.
  8. Return the shredded chicken to the slow cooker and stir it well with the peppers and onions to coat everything in the juices.
  9. Serve immediately with warm tortillas and your choice of toppings. This is a fantastic easy Mexican recipe for any night.

Notes

  • For the best flavor and texture, cook on the LOW setting. This ensures you get that tender slow cooker chicken everyone loves.
  • If you prefer less liquid in your final dish, remove the lid for the last 30 minutes of cooking time on HIGH.
  • This recipe is excellent for meal prep slow cooker chicken; simply portion out the mixture into containers for lunches.
  • Serve this over rice or lettuce for a low-carb option instead of tortillas.
