You deserve a delicious, quick side dish. This recipe shows you how to roast broccolini until it is tender-crisp with slightly charred edges, flavored simply with garlic, lemon, and olive oil. It is ready in under 15 minutes.

Ingredients

Scale
  • 1 pound broccolini, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. You will need a sheet pan for this.
  2. Wash and trim the tough ends off the broccolini. Cut any very thick stalks in half lengthwise so they cook evenly.
  3. Place the trimmed broccolini on the sheet pan. Drizzle with olive oil.
  4. Add the minced garlic, salt, and pepper. Toss everything together directly on the pan until the broccolini is evenly coated. Spread the broccolini into a single layer so it roasts instead of steams.
  5. Roast for 12 to 15 minutes. You want the florets to be slightly browned and the stalks to be tender-crisp.
  6. Remove the pan from the oven. Immediately drizzle with fresh lemon juice.
  7. If you are using it, sprinkle the Parmesan cheese over the hot broccolini and toss gently. Serve right away.

Notes

  • For an air fryer method, cook at 380 degrees Fahrenheit for 8 to 10 minutes, shaking the basket halfway through.
  • This dish is naturally keto friendly and paleo compatible when you skip the Parmesan cheese.
  • If you do not have fresh garlic, you can substitute with 1/2 teaspoon of garlic powder, added with the salt and pepper.
