Make a quick, creamy, high-protein Alfredo sauce substitute using cottage cheese as the base. This recipe is simple and ready fast for weeknight dinners.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 1/4 cup milk (or pasta water)
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Place the cottage cheese, milk (or pasta water), minced garlic, Parmesan cheese (if using), salt, pepper, and nutmeg into a blender.
  2. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take 1 to 2 minutes.
  3. If the sauce is too thick, add milk or pasta water, one tablespoon at a time, until you reach your desired consistency.
  4. Heat the sauce gently in a small saucepan over low heat for 2 to 3 minutes, stirring constantly, until warmed through. Do not boil.
  5. Toss immediately with your favorite cooked pasta.

Notes

  • For a richer flavor, use full-fat cottage cheese or add 1 tablespoon of butter to the blender.
  • If you do not have a blender, use an immersion blender or food processor. Ensure the cottage cheese curds are fully broken down for a smooth texture.
  • Use reserved hot pasta water instead of milk to thin the sauce; the starch helps the sauce cling better to the pasta.
