Make this easy homemade teriyaki sauce in under 15 minutes. It delivers a thick, glossy, sweet, and savory glaze perfect for chicken, salmon, or stir-fries, tasting much better than bottled versions.

Ingredients

Scale
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Combine the soy sauce, brown sugar, water, rice vinegar, grated ginger, minced garlic, and sesame oil in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until the brown sugar dissolves completely.
  3. Once simmering, slowly whisk in the cornstarch slurry.
  4. Continue to cook, stirring constantly, until the sauce thickens and becomes glossy, about 1 to 2 minutes.
  5. Remove the sauce from the heat. It will continue to thicken as it cools.
  6. Use immediately as a marinade, glaze, or stir-fry sauce.

Notes

  • For a healthier option, substitute the brown sugar with honey to make a honey teriyaki sauce.
  • This sauce works wonderfully as a teriyaki marinade for chicken or salmon before grilling or baking.
  • If you prefer a thicker sauce, use slightly less water in the initial mixture or add a bit more cornstarch slurry.
