You deserve a creamy, satisfying dessert that does not require turning on the oven. These bite-sized cheesecake treats use a simple graham cracker crust and a smooth filling, making them perfect for last-minute entertaining or a personal indulgence.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • Optional toppings: strawberry sauce, chocolate ganache, fresh berries

Instructions

  1. Prepare the crust: In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  2. Press the mixture firmly into the bottom of a mini muffin tin lined with paper liners. Use the bottom of a small glass to pack it down well.
  3. Chill the crusts in the freezer for 10 minutes while you prepare the filling.
  4. Make the filling: In a large bowl, beat the softened cream cheese and 1/2 cup sugar with an electric mixer until smooth and creamy.
  5. Beat in the vanilla extract and heavy cream until just combined. Do not overmix.
  6. Spoon or pipe the cream cheese mixture evenly over the chilled crusts in the muffin tin.
  7. Refrigerate the mini cheesecake bites for at least 4 hours, or until firm.
  8. Before serving, top each bite with your desired topping, such as strawberry sauce or a fresh berry.

Notes

  • For a firmer crust, bake the crusts for 5 minutes at 350°F before chilling, though this recipe is designed to be no-bake.
  • You can substitute the graham cracker crust with vanilla wafer crumbs for a different flavor profile.
  • These individual cheesecake cups freeze well; place them in an airtight container before freezing.
