- 4 (6 ounce) cod fillets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large oven-safe skillet or baking dish.
- Pat the cod fillets dry with paper towels. Rub them with olive oil, salt, pepper, and Italian seasoning. Place the seasoned cod in the prepared pan.
- Bake the cod for 10 minutes while you prepare the sauce.
- In a small bowl, whisk together the chicken broth, heavy cream, minced garlic, and chopped sun-dried tomatoes.
- Carefully remove the pan from the oven. Pour the cream mixture around the cod fillets.
- Return the pan to the oven and bake for another 5 to 7 minutes, or until the cod is cooked through and flakes easily.
- Remove the pan from the oven. Stir the fresh spinach into the sauce until it wilts. Sprinkle the Parmesan cheese over the top.
- Serve immediately directly from the pan.
Notes
- You can substitute half-and-half for heavy cream if you prefer a slightly lighter sauce.
- If your sun-dried tomatoes are packed in oil, drain them well before chopping.
- Serve this dish over rice or with crusty bread to soak up the extra sauce.
