Ingredients
Scale
2 ripe bananas
2 large eggs
1/2 cup rolled oats
Instructions
Place the bananas, eggs, and rolled oats into a blender.
Blend until the mixture is smooth and well combined. Let the batter rest for 5 minutes to allow the oats to absorb moisture.
Heat a lightly oiled griddle or non-stick pan over medium heat.
Pour about 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2 to 3 minutes per side, until golden brown and cooked through.
Serve immediately with your preferred toppings.
Notes
For thicker pancakes, add a tablespoon of milk or water to the batter if it seems too thick after resting.
If you do not have a blender, mash the bananas very well, then whisk in the eggs and oats until just combined. The texture will be slightly less uniform.
Use very ripe, spotty bananas for the best sweetness and texture.
