Ingredients
Scale
1 tablespoon olive oil
1.5 pounds ground beef
1 large yellow onion, thinly sliced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (10.5 ounces) condensed cream of mushroom soup
1 can (10.5 ounces) condensed cream of celery soup
1 envelope dry onion soup mix
1 cup water
1 cup uncooked long-grain white rice
1 cup shredded Swiss cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup crispy fried onions, for topping
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for 10 to 15 minutes until the onions are soft and lightly browned.
Add the ground beef to the skillet with the onions. Break the meat apart and cook until browned. Drain off any excess grease.
Stir in the thyme, salt, and pepper. Cook for one minute.
In a large bowl, whisk together the cream of mushroom soup, cream of celery soup, dry onion soup mix, and water until smooth.
Stir the cooked beef and onion mixture and the uncooked rice into the soup mixture until everything is combined.
Pour the entire mixture into the prepared baking dish. Cover the dish tightly with aluminum foil.
Bake for 45 minutes.
Remove the foil. Sprinkle the Swiss cheese and cheddar cheese evenly over the top of the casserole.
Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
Sprinkle the crispy fried onions over the melted cheese during the last 5 minutes of baking. Let the casserole rest for 5 minutes before serving.
Notes
For a richer flavor, use beef broth instead of water when mixing the liquid ingredients.
You can substitute the Swiss and cheddar cheese blend with Gruyère cheese for a more authentic French onion taste.
If you prefer a creamier texture, use 1 cup of cooked rice instead of uncooked rice; reduce the baking time by 15 minutes.
