Make your mornings feel special with this homemade Gingerbread Granola. It is packed with warm holiday spices, molasses, and creates wonderful crunchy clusters perfect for a festive breakfast or a thoughtful food gift.

Ingredients

Scale
  • 4 cups rolled oats
  • 1/2 cup pecans, roughly chopped
  • 1/2 cup slivered almonds
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/3 cup pure maple syrup
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries (added after baking)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, pecans, almonds, and shredded coconut.
  3. In a separate small bowl, whisk together the ground ginger, cinnamon, cloves, nutmeg, and salt. Add this spice mix to the oat mixture and toss well to coat everything evenly.
  4. In a third bowl, mix the melted coconut oil, maple syrup, molasses, and vanilla extract until smooth.
  5. Pour the wet ingredients over the dry ingredients. Use a spatula to mix everything thoroughly until the oats and nuts are completely coated.
  6. Spread the granola mixture in a thin, even layer onto the prepared baking sheet. Press it down lightly if you want larger clusters.
  7. Bake for 25 minutes. Remove the pan from the oven and gently stir the granola. Return to the oven and bake for another 10 to 15 minutes, watching closely to prevent burning. You want it golden brown and fragrant.
  8. Remove from the oven and let the granola cool completely on the baking sheet without stirring. This cooling process helps form the crunchy clusters.
  9. Once completely cool, break the granola into pieces. Stir in the dried cranberries.
  10. Store your **crunchy oat snack** in an airtight container at room temperature.

Notes

  • For **gluten free granola ideas**, make sure you use certified gluten-free rolled oats.
  • If you want a Paleo option, substitute the oats with a mix of nuts and seeds, and use a Paleo-approved sweetener instead of maple syrup.
  • To make this a lovely **easy Christmas food gift**, package it in clear jars with a ribbon and attach a small tag.
  • If you prefer larger clusters, do not stir the granola during the second baking period.
