Make crispy, sweet gluten-free waffle sticks coated in cinnamon sugar. This recipe yields tender waffles perfect for snacking or dipping.

Ingredients

Scale
  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates.
  2. In a large bowl, whisk together the gluten-free flour blend, 2 tablespoons sugar, baking powder, salt, and 1 teaspoon cinnamon.
  3. In a separate medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Prepare the coating: In a shallow dish, mix the 1/2 cup sugar and 2 tablespoons cinnamon until uniform.
  6. Cook the waffles in the iron until golden brown and cooked through. Cooking time may vary based on your iron.
  7. Immediately after removing a cooked waffle from the iron, place it on a cutting board. While the waffle is still hot, cut it into four long sticks.
  8. Dip or roll the hot waffle sticks into the cinnamon sugar mixture, coating all sides.
  9. Place the coated sticks on a wire rack to cool slightly. Serve warm or at room temperature.

Notes

  • For extra crispy sticks, cook the waffles slightly longer than usual until they are deep golden brown.
  • If your waffle iron does not make sticks, cook standard waffles and cut them into strips after coating.
  • You can substitute brown sugar for white sugar in the coating for a deeper molasses flavor.
