Create a cool, creamy, and minty Grasshopper Pie without turning on your oven. This easy, make-ahead dessert features a rich chocolate cookie crust and a fluffy, non-alcoholic mint filling perfect for any gathering.

Ingredients

Scale
  • 1 1/2 cups chocolate cookie crumbs (about 30 Oreo cookies)
  • 1/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pure peppermint extract
  • 1/4 teaspoon green food coloring (optional, for classic color)
  • 1 cup heavy whipping cream
  • 1/2 cup mini marshmallows
  • 1/4 cup chocolate syrup
  • 1/2 cup whipped topping (like Cool Whip), thawed, for topping
  • Chocolate shavings, for garnish

Instructions

  1. Prepare the crust: Combine the chocolate cookie crumbs and melted butter in a bowl. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
  2. Make the cream cheese base: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar until fully combined. Mix in the vanilla extract, peppermint extract, and green food coloring, if using.
  3. Prepare the whipped cream: In a separate, chilled bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
  4. Assemble the filling: Gently fold in the mini marshmallows and chocolate syrup into the mint mixture.
  5. Fill the pie: Spoon the mint filling evenly into the chilled Oreo crust. Smooth the top with a spatula.
  6. Chill the pie: Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Garnish and serve: Before serving, top the pie with the thawed whipped topping and sprinkle generously with chocolate shavings. Slice and enjoy this refreshing summer dessert.

Notes

  • For an even richer chocolate flavor in the crust, use chocolate sandwich cookies that have a cream filling.
  • If you prefer a frozen grasshopper pie, freeze the assembled pie for at least 8 hours before topping and serving.
  • You can substitute the heavy whipping cream with an equal amount of stabilized whipped topping for a slightly firmer, easier-to-handle filling.
