Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving
  • Pita bread, for serving (optional)
  • Tzatziki sauce, for serving (optional)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken onto the skewers, leaving a small space between each piece.
  5. Preheat your grill to medium-high heat.
  6. Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Serve the Greek Lemon Chicken Skewers hot with lemon wedges, pita bread, and tzatziki sauce if desired.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the marinade.
  • Feel free to add vegetables like bell peppers and red onion to the skewers along with the chicken.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
