A delightful seasonal salad featuring grilled peaches, salty prosciutto, and peppery arugula, perfect for a light and flavorful meal.

Ingredients

Scale
  • 2 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 4 cups arugula
  • 4 ounces thinly sliced prosciutto
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the cut sides of the peaches with olive oil and season with salt and pepper.
  3. Grill the peaches for 3-4 minutes per side, until tender and slightly caramelized. Let cool slightly, then slice each half into wedges.
  4. In a large bowl, toss the arugula with extra virgin olive oil and season with salt and pepper.
  5. Arrange the grilled peach wedges and prosciutto over the arugula.
  6. Sprinkle with goat cheese and drizzle with balsamic glaze.
  7. Serve immediately.

Notes

  • You can substitute other soft cheeses like feta or burrata if goat cheese is not available.
  • For a sweeter glaze, you can reduce balsamic vinegar in a small saucepan until slightly thickened.
  • Add toasted nuts like walnuts or pecans for extra crunch.
