A hearty chopped salad inspired by the Italian grinder sandwich, featuring deli meats, cheese, crisp vegetables, and a tangy dressing.

Ingredients

Scale
  • 1 head romaine lettuce, chopped
  • 4 oz sliced salami, chopped
  • 4 oz sliced pepperoni, chopped
  • 4 oz sliced provolone cheese, chopped
  • 1/2 cup sliced black olives
  • 1/2 cup sliced banana peppers
  • 1/4 cup thinly sliced red onion
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Chop the romaine lettuce, salami, pepperoni, and provolone cheese into bite-sized pieces. Place these ingredients into a large bowl.
  2. Add the olives, banana peppers, red onion, and tomatoes to the bowl.
  3. In a separate small bowl, whisk together the mayonnaise, red wine vinegar, Dijon mustard, minced garlic, and oregano. Season with salt and pepper.
  4. Pour the dressing over the salad ingredients.
  5. Toss everything together until the salad is evenly coated with the dressing.
  6. Serve immediately or chill for later meal prep.

Notes

  • For a low-carb option, skip any croutons or sweet additions to the dressing.
  • You can substitute the meats with grilled chicken or chickpeas for a different protein base.
  • Make the dressing up to three days ahead and store it in the refrigerator.
