Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Drain the cottage cheese thoroughly. Press out as much moisture as possible using a paper towel or cheesecloth.
Combine the drained cottage cheese, eggs, almond flour, baking powder, garlic powder, and salt in a food processor. Pulse until the mixture is smooth and well combined. Do not overmix.
Fold in the shredded mozzarella cheese by hand.
Scoop tablespoon-sized portions of the dough onto the prepared baking sheet. Gently shape them into small, round, flattened discs, about 1/2 inch thick.
Bake for 15 to 18 minutes, or until the bites are set and lightly golden brown.
Remove from the oven. If desired, immediately sprinkle with your chosen toppings like everything bagel seasoning or chives.
Let cool slightly before serving.
Notes
For the best texture, ensure your cottage cheese is very dry before mixing. Excess water will make the dough too wet.
If you want a firmer bite, you can chill the dough for 15 minutes before scooping.
To keep these low-carb, avoid traditional bagel toppings like sugary sauces or high-carb vegetables.
