Ingredients
Scale
1/2 cup rolled oats
1 scoop vanilla or unflavored protein powder
1 tablespoon chia seeds
1 tablespoon natural peanut butter
1 tablespoon maple syrup or honey (optional)
1/4 teaspoon cinnamon
Pinch of salt
3/4 cup milk (dairy or non-dairy)
1/4 cup plain Greek yogurt (for extra protein)
Instructions
In a jar or container with a lid, combine the rolled oats, protein powder, chia seeds, cinnamon, and salt. Mix the dry ingredients well.
Add the peanut butter, maple syrup (if using), milk, and Greek yogurt to the jar.
Stir or shake the mixture thoroughly until all ingredients are fully incorporated and the peanut butter is mostly mixed in.
Seal the container and refrigerate for at least 6 hours, or preferably overnight.
In the morning, check the consistency. If it is too thick, add a splash more milk. If it is too thin, add a few more chia seeds and let it sit for 10 minutes.
Serve cold directly from the jar.
Notes
For a thicker texture, reduce the milk by 1-2 tablespoons initially.
You can store these oats in the refrigerator for up to 4 days for easy meal prepping.
If you prefer dairy-free, substitute the Greek yogurt with an extra 1/4 cup of high-protein plant-based milk or soy yogurt.
Top with sliced banana or a few chopped peanuts before serving for added crunch.
