Follow this recipe to make a refreshing, coffee shop style iced lavender latte at home using homemade lavender syrup.

Ingredients

Scale
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender buds
  • 1/2 cup strong brewed coffee or 2 shots espresso, cooled
  • 1 cup milk (dairy or non-dairy)
  • Ice cubes
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Make the lavender syrup: Combine water, sugar, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the saucepan from the heat. Let the lavender steep in the hot syrup for 15 minutes.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, pressing gently on the buds to extract liquid. Discard the buds. Let the syrup cool completely.
  4. Prepare your coffee: Brew 1/2 cup of strong coffee or pull two shots of espresso and let it cool to room temperature or chill it.
  5. Assemble the latte: Fill a tall glass with ice cubes.
  6. Add 2 to 3 tablespoons of the cooled lavender syrup to the glass, depending on your sweetness preference.
  7. Pour the cooled coffee or espresso over the syrup and ice.
  8. Slowly pour the milk over the coffee layer.
  9. Serve immediately. Stir before drinking to combine the layers.

Notes

  • For a dairy-free option, use oat milk or almond milk. Oat milk provides the creamiest texture.
  • If you prefer a stronger floral taste, steep the lavender for 20 minutes, but taste frequently to avoid a soapy flavor.
  • To make this a blended drink, combine all ingredients (except ice) in a blender, add 1 cup of ice, and blend until smooth.
  • You can substitute the granulated sugar with honey or maple syrup when making the syrup, adjusting the liquid amounts slightly if needed.
