Follow these steps to create a refreshing, layered Iced Strawberry Matcha Latte using a homemade strawberry puree.

Ingredients

Scale
  • 1 cup fresh or frozen strawberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon water
  • 2 teaspoons ceremonial grade matcha powder
  • 2 ounces hot water (175°F / 80°C)
  • 1 cup milk of choice (dairy or non-dairy)
  • Ice cubes

Instructions

  1. Prepare the strawberry puree: Combine strawberries, sugar, and 1 tablespoon of water in a small saucepan. Heat over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 5 to 7 minutes. Mash any remaining large pieces. Remove from heat and let cool completely.
  2. Prepare the matcha: Sift the matcha powder into a small bowl. Add 2 ounces of hot water (not boiling). Whisk vigorously in a ‘W’ or ‘M’ pattern until the matcha is smooth and frothy with no clumps.
  3. Assemble the drink: Place ice cubes into a tall glass. Pour the cooled strawberry puree over the ice.
  4. Pour the milk over the puree layer.
  5. Slowly pour the prepared matcha mixture over the back of a spoon held just above the milk layer to create a distinct separation between the green matcha and the pink base.
  6. Serve immediately.

Notes

  • For a thinner syrup, add 1 more tablespoon of water to the puree mixture while cooking.
  • Use oat milk or almond milk for a dairy-free version.
  • If you prefer a sweeter drink, add a small amount of sweetener directly to the matcha before whisking.
