Make a hearty, creamy chicken and rice soup quickly using your Instant Pot. This one-pot meal cooks chicken and rice together for a comforting dinner.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice, rinsed
  • 4 cups chicken broth
  • 1 medium yellow onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream or cream cheese (4 oz)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts, rinsed rice, chicken broth, onion, carrots, celery, thyme, rosemary, salt, and pepper into the inner pot of your Instant Pot.
  2. Secure the lid and set the vent to sealing.
  3. Cook on Manual/Pressure Cook setting on High pressure for 8 minutes.
  4. When cooking finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to quick release any remaining pressure.
  5. Open the lid. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
  6. Stir in the heavy cream or cream cheese until fully melted and incorporated.
  7. Stir the cornstarch slurry and pour it slowly into the soup while stirring constantly.
  8. Set the Instant Pot to Sauté mode and let the soup simmer for 2 to 3 minutes, stirring until the soup thickens to your desired consistency.
  9. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • Rinsing the rice prevents excess starch from making the soup overly gummy.
  • For a richer flavor, substitute half the chicken broth with water and use bouillon cubes.
  • If using cream cheese, cut it into cubes before adding to help it melt faster during the Sauté step.
