Make a rich, flavorful Tuscan white bean soup quickly using your Instant Pot. This recipe features sun-dried tomatoes, spinach, and a creamy texture.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil. When hot, add onion and cook until softened, about 4 minutes.
  2. Add garlic, rosemary, and thyme. Cook for 1 minute until fragrant. Press Cancel.
  3. Stir in the chopped sun-dried tomatoes, rinsed cannellini beans, and vegetable broth.
  4. Secure the lid and set the valve to sealing. Cook on Manual/Pressure Cook setting on High for 5 minutes.
  5. When the cooking cycle finishes, allow the pressure to naturally release for 10 minutes, then carefully quick release any remaining pressure.
  6. Open the lid. Stir in the heavy cream (or coconut milk) and Parmesan cheese, if using.
  7. Use an immersion blender to blend about one-third of the soup directly in the pot until creamy. Alternatively, carefully transfer 2 cups of soup to a regular blender, blend until smooth, and return to the pot.
  8. Stir in the fresh spinach until wilted. Season with salt and pepper. Serve hot.

Notes

  • For a thicker soup without blending, add 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water during the final step before adding spinach.
  • If you prefer a stronger tomato flavor, add 1 teaspoon of tomato paste when sautéing the garlic.
  • Rinsing the canned beans removes excess sodium and starch.
