Make a perfectly tender and juicy turkey breast in your Instant Pot. This recipe is fast, ideal for weeknight dinners or small holiday gatherings, and includes instructions for a simple gravy made right in the pot.

Ingredients

Scale
  • 1 (3-4 pound) boneless turkey breast, skin on or off
  • 1 cup chicken broth or water
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons softened butter
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch (for gravy)
  • 1 cup cold water (for gravy)

Instructions

  1. In a small bowl, mix the softened butter with lemon juice, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper to create the herb butter.
  2. Pat the turkey breast dry with paper towels. Rub the herb butter mixture evenly all over the turkey breast.
  3. Pour 1 cup of chicken broth or water into the inner pot of your Instant Pot. Place the trivet inside the pot.
  4. Carefully place the seasoned turkey breast on top of the trivet.
  5. Secure the lid on the Instant Pot and set the valve to the sealing position.
  6. Cook on High Pressure for 55 minutes for a 3-4 pound breast.
  7. When the cooking time finishes, allow for a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to the venting position to release any remaining pressure.
  8. Remove the turkey breast from the pot and place it on a cutting board. Tent loosely with foil and let it rest for at least 10 minutes while you make the gravy.
  9. Carefully pour the liquid from the Instant Pot liner into a heat-safe measuring cup, leaving behind any large solids. You should have about 1.5 to 2 cups of liquid.
  10. In a small bowl, whisk together the cornstarch and 1 cup of cold water until smooth to create a slurry.
  11. Pour the pot liquid into the Instant Pot liner. Set the Instant Pot to Sauté mode (Normal setting). Bring the liquid to a simmer.
  12. Slowly whisk in the cornstarch slurry until the gravy thickens to your desired consistency. Simmer for 1-2 minutes, stirring constantly.
  13. Slice the turkey breast against the grain and serve immediately with the fresh herb gravy.

Notes

  • For extra flavor, you can place thin slices of onion and garlic under the skin before rubbing on the herb butter.
  • If you prefer a crispier skin, place the rested turkey breast under the broiler for 3-5 minutes after slicing, watching closely to prevent burning.
  • This recipe works well for boneless turkey breast, which cooks faster than bone-in cuts.
