Ingredients
Scale
2 cups cooked, shredded chicken
4 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup shredded sharp cheddar cheese
1/4 cup finely diced fresh or pickled jalapenos (remove seeds for less heat)
4 slices cooked bacon, crumbled
2 tablespoons finely chopped green onion
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the softened cream cheese in a medium bowl and beat it until smooth.
Add the mayonnaise and sour cream to the bowl. Mix until the dressing base is fully combined and creamy.
Stir in the garlic powder, salt, and pepper.
Fold in the shredded chicken until it is evenly coated with the dressing.
Gently mix in the cheddar cheese, diced jalapenos, crumbled bacon, and green onion.
Cover the bowl and chill the chicken salad for at least 30 minutes before serving to allow the flavors to blend.
Notes
For an even quicker preparation, use pre-cooked rotisserie chicken.
If you prefer a tangier flavor, substitute plain Greek yogurt for the sour cream.
Serve this salad over lettuce cups, with low-carb crackers, or in bell pepper halves for a keto-friendly meal.
