A simple, high-fat, low-carb casserole featuring shredded chicken in a rich, creamy, spicy buffalo sauce, baked until bubbly.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce (check label for zero sugar)
  • 1/2 cup shredded cheddar cheese, divided
  • 1/4 cup blue cheese crumbles (optional)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the softened cream cheese, heavy whipping cream, buffalo sauce, butter, garlic powder, and onion powder. Mix until completely smooth and creamy.
  3. Stir in the shredded chicken and half of the cheddar cheese until everything is evenly coated in the sauce. Season with salt and pepper.
  4. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
  5. Sprinkle the remaining cheddar cheese and the blue cheese crumbles (if using) over the top.
  6. Bake for 20 to 25 minutes, or until the casserole is heated through and the cheese on top is melted and lightly browned.
  7. Let the casserole rest for 5 minutes before serving.

Notes

  • For a thicker sauce, reduce the heavy cream slightly or add an extra ounce of cream cheese.
  • If you prefer a milder flavor, reduce the amount of buffalo sauce or add 2 tablespoons of sour cream to the sauce mixture.
  • You can adapt this for a slow cooker by mixing all ingredients (except the top cheese layer), cooking on low for 3 hours, then topping with cheese and cooking on high for 15 minutes until bubbly.
  • Use rotisserie chicken for quick preparation.
