Bake bell peppers filled with a rich, creamy mixture of Italian sausage, cream cheese, and seasonings for a satisfying low-carb meal.

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or hot, casings removed)
  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
  4. Reduce the heat to low. Add the softened cream cheese, heavy cream, mozzarella cheese, Parmesan cheese, oregano, and garlic powder to the skillet with the sausage. Stir until the cream cheese is melted and the mixture is well combined and creamy. Season with salt and pepper.
  5. Spoon the creamy sausage mixture evenly into the hollowed-out bell pepper halves.
  6. Bake for 25 to 30 minutes, or until the peppers are tender and the filling is hot and lightly browned on top.
  7. Garnish with fresh parsley before serving.

Notes

  • If you prefer a slightly softer pepper, you can briefly steam or microwave the pepper halves for 3 minutes before stuffing.
  • For extra flavor, substitute half of the heavy cream with a low-carb marinara sauce that contains no added sugar.
  • You can use cauliflower rice in the filling for added texture, adding 1/2 cup cooked, riced cauliflower with the cheese mixture.
