- 3 medium zucchini
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Cooking spray (avocado or olive oil based)
- Preheat your air fryer to 400°F (200°C).
- Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into sticks about 1/4 to 1/3 inch thick.
- Pat the zucchini sticks very dry using paper towels. This step is important for crispiness.
- Set up a dredging station with three shallow bowls.
- In the first bowl, combine the almond flour, garlic powder, oregano, salt, and pepper. Mix well.
- In the second bowl, place the beaten egg.
- In the third bowl, place the grated Parmesan cheese.
- Dip each zucchini stick first into the almond flour mixture, shaking off excess.
- Next, dip the floured stick into the egg, letting excess drip off.
- Finally, press the stick firmly into the Parmesan cheese to coat completely.
- Lightly spray the air fryer basket with cooking spray.
- Arrange the coated zucchini sticks in a single layer in the air fryer basket, avoiding overcrowding. You will need to cook in batches.
- Spray the tops of the coated fries lightly with cooking spray.
- Air fry for 8 to 12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your preferred keto dipping sauce.
Notes
- For extra crispiness, you can chill the coated zucchini sticks on a baking sheet in the refrigerator for 15 minutes before air frying.
- Do not skip patting the zucchini dry; excess moisture prevents the coating from adhering and crisping.
- If you do not have an air fryer, bake on a wire rack set over a baking sheet at 425°F (220°C) for 15-20 minutes, flipping halfway.
