Ingredients
Scale
4 large bell peppers (any color)
1 tablespoon olive oil
1 pound ground beef (80/20 recommended)
1/2 cup onion, chopped
2 tablespoons keto taco seasoning (ensure no added sugar or starch)
1/4 cup water
4 ounces cream cheese, softened
1 cup shredded cheddar or Monterey Jack cheese, divided
1/4 cup sour cream
2 tablespoons fresh cilantro, chopped
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Stir in the keto taco seasoning and water. Simmer for 5 minutes, allowing the liquid to reduce slightly.
Remove the skillet from the heat. Stir in the softened cream cheese, 1/2 cup of the shredded cheese, and the sour cream until combined. Mix in the chopped cilantro.
Spoon the meat mixture evenly into the bell pepper halves.
Top each stuffed pepper with the remaining 1/2 cup of shredded cheese.
Bake for 30 to 35 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Notes
For serving, top with fresh avocado slices or a small amount of low-carb salsa.
If you prefer softer peppers before stuffing, you can blanch them in boiling water for 3 minutes or bake them empty for 10 minutes before filling.
Use high-quality, full-fat dairy for best keto results.
