Ingredients
Scale
1 cup all-purpose flour
1/2 cup sweet rice flour
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1 cup cold water
1 teaspoon sugar (for batter)
1 cup panko breadcrumbs
1 cup small diced frozen french fries or raw potato cubes
8 hot dogs (or half hot dogs and half mozzarella sticks)
8 wooden skewers
Vegetable oil, for deep frying
Granulated sugar, for coating
Instructions
Prepare the filling: If using half-and-half, cut hot dogs in half and cut mozzarella sticks to match the length. Insert a skewer through one piece of hot dog and one piece of cheese, or through a whole hot dog. Set aside.
Make the batter: In a bowl, whisk together the flour, rice flour, baking powder, salt, and 1 teaspoon of sugar. Whisk in the egg and cold water until you have a smooth, thick batter.
Prepare the coating station: Spread the panko breadcrumbs on one plate and the diced potatoes on another plate.
Coat the dogs: Dip each skewered item completely into the batter, letting excess drip off. Immediately roll it in the diced potatoes, pressing gently so they stick. Then, roll it in the panko breadcrumbs, pressing firmly to cover the entire surface.
Chill: Place the coated corn dogs on a parchment-lined tray and freeze for at least 15 minutes. This helps the coating adhere during frying.
Fry: Heat 2-3 inches of vegetable oil in a deep pot to 350°F (175°C). Carefully lower the corn dogs into the hot oil, frying 2-3 at a time to avoid overcrowding.
Cook until golden brown and crispy, about 3-4 minutes per side. Remove and drain on a wire rack lined with paper towels.
Finish: While still warm, immediately roll the fried corn dogs generously in granulated sugar.
Serve hot with your choice of dipping sauces.
Notes
For the best cheese pull, use low-moisture mozzarella sticks.
If you do not have diced potatoes, you can skip the potato layer and only use panko for a classic panko-crusted dog.
Serve with ketchup, yellow mustard, or a sweet chili sauce.
