Marco here! This Mediterranean Lentil Salad is packed with fresh vegetables, protein-rich lentils, and a bright lemon dressing. It is a healthy, satisfying, and easy vegetarian lunch perfect for meal prep.

Ingredients

Scale
  • 1 cup green or brown lentils, rinsed
  • 3 cups water or vegetable broth
  • 1/2 teaspoon salt, plus more for cooking
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Combine the rinsed lentils, water or broth, and 1/2 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender but not mushy. Drain any excess liquid and let the lentils cool slightly.
  2. While the lentils cook, prepare the tangy lemon dressing: In a small bowl, whisk together 1/4 cup olive oil, 3 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard, 1 clove garlic (minced), 1/2 teaspoon dried oregano, and salt and pepper to taste.
  3. In a large bowl, combine the slightly cooled lentils, diced cucumber, halved tomatoes, chopped red onion, fresh parsley, and fresh mint.
  4. Pour the lemon dressing over the lentil and vegetable mixture. Toss gently to coat everything evenly.
  5. If using, fold in the crumbled feta cheese.
  6. Taste and adjust seasoning if needed. Serve immediately, or chill for at least 30 minutes to allow the flavors to meld. This salad is excellent for meal prep salads.

Notes

  • For a quick vegan option, simply omit the feta cheese.
  • This recipe makes a great gluten free lentil dish; no adjustments are needed.
  • This salad tastes even better the next day, making it a fantastic make ahead salad for potluck gatherings.
  • If you want a richer flavor, roast the vegetables lightly before adding them to the salad.
