Ingredients

Scale
  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1/2 pound ground beef
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup nacho cheese sauce
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tablespoons chopped fresh cilantro
  • Optional toppings: sour cream, pickled jalapenos, salsa

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork.
  3. Bake the potatoes for 45-60 minutes, or until tender. Let them cool slightly.
  4. Cut each potato in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch border to create a shell.
  5. Brush the inside and outside of the potato shells with olive oil.
  6. Place the potato shells cut-side down on a baking sheet. Bake for 10-15 minutes, or until golden brown and crispy.
  7. While the shells are baking, cook the ground beef in a skillet over medium heat. Drain off any excess grease.
  8. Stir in the chili powder, cumin, salt, and pepper. Cook for another minute until fragrant.
  9. Flip the potato shells over. Fill each shell with shredded cheddar cheese and nacho cheese sauce.
  10. Top with the seasoned ground beef, diced tomatoes, and black olives.
  11. Bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  12. Garnish with fresh cilantro and any other desired toppings. Serve immediately.

Notes

  • For crispier skins, you can scoop out a little more potato flesh.
  • Feel free to customize your toppings with your favorite nacho ingredients.
  • These are best served fresh, but leftovers can be reheated in the oven.
